Loved this article on the health benefits of pumpkin so much I simply had to share it complete:
So did I get you in the mood for fall’s favorite flavor? Then try my pumpkin chili…not only delicious but SOOOOOOO much healthier than the regular old recipe!!!
JESSICA’S PALEO PUMPKIN CHILI
Gather together the following ingredients:
Chop the onion, green pepper, parsnips, and garlic in food processor (ROUGHLY), then add olive oil to the pot and heat. Add the chopped veggies along with the turkey (or whatever) and sauté until the meat is slightly browned. Pour off excess liquid and grease. Add tomatoes, pumpkin, chili powder, cumin, pepper and salt and mix well. Cover and simmer for 20-30 minutes. Serves 4
